Noi
Chianti Colli Fiorentini DOCG
Noi embodies the winemaking tradition of the hills surrounding Florence. It is produced from Sangiovese, Canaiolo and Colorino grapes grown in the vineyards around Castello di Volognano and harvested by hand at the end of September.
Fermentation takes place in concrete vats, with around 15 days of skin maceration to enhance colour and aromatic depth. After spontaneous malolactic fermentation, the wine ages in oak barrels for approximately eight months, followed by further refinement in bottle.
