Vin Santo is one of Tuscany’s oldest winemaking traditions. Aetius is produced from carefully selected Trebbiano Toscano and Malvasia del Chianti grapes, which are left to dry for around four months on traditional reed mats in the attics of the estate.
After pressing, the must ferments slowly and ages in small oak barrels—traditional caratelli—where it remains for at least four years.
